Quinoa with Spinach and Carrot Puree Recipe

This Quinoa with Spinach and Carrot Puree is a nutritious and flavorful vegetarian dish ideal for a quick weeknight dinner or a filling lunch. The quinoa is perfectly cooked and topped with a delectable puree of fresh spinach and carrots. The dish is simple to make and will please both children and adults.

  • Prep Time: 10 minutes
  • Cook Time: 30 minutes
  • Total Time: 40 minutes

Instructions

  • Drain the quinoa after rinsing it under cold water.
  • Bring the quinoa, 2 cups of water, and 1/2 teaspoon of salt to a boil in a medium saucepan over high heat.
  • Reduce the heat to low, cover, and cook for 15-20 minutes, or until the water has been absorbed and the quinoa has reached tenderness.
  • Remove from the heat and set aside for 5 minutes, covered.
  • Set aside after fluffing with a fork.
  • Bring the chopped spinach, carrots, and 1/4 cup water to a boil in a separate saucepan over high heat.
  • Reduce the heat to low, cover, and let the vegetables cook for 15-20 minutes, or until tender.
  • Remove from the heat and set aside to cool slightly.
  • In a blender or food processor, combine the cooked vegetables and any remaining cooking liquid.
  • Combine the olive oil, 1/4 teaspoon salt, and 1/8 teaspoon black pepper in a mixing bowl.
  • Blend until completely smooth.
  • To serve, divide the quinoa among four plates and top with the spinach and carrot puree.
