Quinoa Tomato Salad with Arugula and Limes Recipe

Instructions

  • Rinse the quinoa through a fine mesh strainer and place it in a pot with 2 cups of water.
  • Bring to a boil, then lower to a low heat and cover.
  • Cook for 15 minutes before removing from heat and resting for 5 minutes.
  • Transfer the quinoa to a large mixing bowl and fluff with a fork.
  • Arugula, cherry tomatoes, red onion, and cilantro are optional.
  • To combine, toss everything together.
  • In a small mixing bowl, combine the lime juice, olive oil, salt, and pepper.
  • Toss the salad in the dressing to coat.
  • Serve immediately or chill until ready to serve in the refrigerator.
