  • Cook Time: 20 minutes

Instructions

  • Thoroughly rinse the quinoa and lentils.
  • Combine the quinoa, lentils, water, olive oil, salt, and black pepper in a medium saucepan.
  • Bring to a boil, then reduce to a low heat and continue to cook for 15-20 minutes, or until the quinoa and lentils are tender and the liquid has been absorbed.
  • Combine the cooked quinoa and lentils with the avocado, cherry tomatoes, red onion, cilantro, and lime juice in a large mixing bowl.
  • Gently toss to combine.
  • If desired, garnish the quinoa and lentil bowl with additional cilantro and lime wedges.
